Daiginjo-shu is sake made with less than 50% polished rice. The rice is polished over a long period of time and the sake brewery’s techniques are combined to produce a graceful aroma with no cloying taste.
Daiginjo-shu contains brewing alcohol, which gives it a refreshing taste and enhances its flavor and aroma by reducing the amount of miscellaneous flavors.
This Daiginjo-shu is made from “Yamada-Nishiki,” a rice suitable for sake brewing, polished to 35%.
Aged well, it is a slightly dry sake with a well-balanced, mellow richness and a full, fruity aroma.
It can be served cold or at room temperature.
