Saikyo-marinated Sanma

The Saikyo miso used in Saikyo-zuke (a type of marinated fish) is a kind of white miso that is primarily produced in the Kyoto region. It is characterized by a strong sweetness and a smooth, mellow flavor. The name “Saikyo” comes from the old name of Kyoto, “Saikyo,” and the miso got its name because it was historically produced in Kyoto. The sweetness of Saikyo miso is attributed to the generous use of rice koji and a relatively short fermentation period. As a result, it has a gentle and mellow sweetness, making it a popular and special seasoning in Japanese cuisine.

This product uses 100% fresh, fatty  Pacific saury from Nemuro, carefully marinated in Saikyo miso. Each piece is made with care and pride, making it a product of confidence. After thawing, gently rinse off the Saikyo miso and grill over low heat to enjoy.
