nukazuke sanma

Nukazuke is one of Japan’s traditional preserved foods, where vegetables are pickled using nuka (rice bran). Nuka refers to the outer husk or the byproduct of rice after it has been milled, and it contains abundant lactic acid bacteria that promote fermentation. Nukazuke has been enjoyed throughout Japan for a long time as a method of preserving vegetables using these beneficial bacteria for extended periods. In Japan, nukazuke is a beloved part of the dining table, often enjoyed as a side dish with rice or as an accompaniment to alcoholic beverages.

This product is a proud masterpiece made with 100% fresh, fatty Pacific saury (Cololabis saira) from Nemuro, carefully crafted one by one with great attention. The Pacific saury, with a perfect balance of saltiness and the flavor of rice bran, offers a distinctive Japanese taste. Among the four varieties of processed saury, this one has the most pronounced saltiness. It is also highly recommended to enjoy it as an ochazuke, placed on top of rice and served with hot green tea.
